200g of McDonnells Curry Powder
800ml of water
1 large onion, chopped
1 red pepper, chopped
1 tbsp. sunflower oil, for frying
500g/1lb leftover cooked turkey breast sliced
400ml coconut milk
25g of cranberry sauce
1 bunch fresh coriander, chopped (optional)
Serves 4-6 people
1.Heat the oil in frying pan and cook the chopped onions & peppers. Add slices of leftover turkey breast in a pan for 2-3 minutes.
2.Place the curry powder in a saucepan add in 800ml of water and bring to the boil and simmer for 5 mins
3.Add in coconut milk & cranberry to the sauce stir and simmer for 2 minutes.
4.Add in the leftover turkey pieces, onion & peppers and cook on gentle heat for 20 minutes.
6. Serve with fluffy basmati rice.
